Today I Learned: I would not make a good food blogger

Five years ago I found out I have a very strong gluten intolerance caused by my auto-immune disease. Throughout the years I’ve spent a lot of time and energy trying to bake or cook gluten-free and I’ve learned it’s been a long process of trial and error.

Now I will admit I don’t like to follow the rules when it comes to baking or cooking which is probably why it’s ended not so good more than a hand full of times. Today I decided to tackle this again.. and it turned out delicious!

More importantly, I learned the time it took to bake these two recipes and then create some beautiful content around them I was shocked to look at the clock and realise I had been in the kitchen for almost 5 hours! So kudos to all my food blogger friends and fellow home chefs, it is definitely not as easy as it looks!

Chocolate Date Protein Bars

  • 200g of Dates
  • 1/2 Almond Butter
  • 4 tsp Maple Syrup
  • 1/2 Gluten Free Oats
  • 1/2 Ground Almonds
  • 2 tsp Coconut Oil 
  1. Soak 200g of Dates in a bowl of hot water for 10 minutes
  2. Mix all other ingredients in a bowl
  3. Blend Dates in food processor
  4. Add Dates to all other ingredients
  5. Cook for 25 minutes @ 350


White Chocolate Cinnamon Raspberry Cookies

  • 1/2 Cup Almond Flour
  • 1/2 Cup Arrow Root Flour
  • 1/2 Almond Milk 
  • 2 Eggs
  • 1 tsp Coconut Oil
  • 1 tsp Baking Soda
  • 2 tsp Cinnamon
  • White Chocolate Chips
  • Frozen Raspberries 
  1. Mix all dry ingredients in a bowl
  2. Add in Almond Milk
  3. Melt coconut oil on the stove low heat
  4. Add coconut oil into the mixture
  5. Add in 2 eggs and beat mixture together
  6. Add in White Chocolate Chips
  7. Place mixture onto the pan and place individual raspberries in the middle of each cookie
  8. Bake in oven @ 350 for 30 minutes
